  1. Peel and dice 500 g of potatoes, 1 large onion, and 2 cloves of garlic and set aside for later use.
  2. In a large pot over medium heat, add 2 tablespoons of olive oil and heat until shimmering.
  3. Sauté the diced onion and garlic until soft and fragrant, about 5 minutes, stirring occasionally.
  4. Add the diced potatoes to the pot along with 1 liter of chicken broth.
