Caldo verde recipe

Ingredients
- 500 g potatoes
- 1 onion
- 2 garlic
- 200 g kale
- 50 ml olive oil
- 1 chicken broth
- 150 g chorizo
- 1 tsp salt
- 1 tsp black pepper
How to make Caldo verde
- Peel and dice 500 g of potatoes, 1 large onion, and 2 cloves of garlic and set aside for later use.
- In a large pot over medium heat, add 2 tablespoons of olive oil and heat until shimmering.
- Sauté the diced onion and garlic until soft and fragrant, about 5 minutes, stirring occasionally.
- Add the diced potatoes to the pot along with 1 liter of chicken broth.
- Bring the mixture to a boil, then reduce the heat and cook until the potatoes are tender, about 15 minutes.
- Once tender, blend the mixture until smooth, then return it to the pot over low heat.
- Fold in 150 g of chopped kale and 100 g of sliced chorizo, cooking until the kale wilts, about 10 minutes.
- Season the soup with salt and black pepper to taste, stirring well before serving hot.
