How to make Biltong

  1. Cut the beef fillet into strips about 1 cm thick.
  2. In a bowl, mix 40 g of coarse salt, 10 g of black pepper, 15 g of crushed coriander seeds, and 10 g of brown sugar.
  3. Generously rub the spice mixture onto all sides of the beef strips until well coated.
  4. Drizzle 50 ml of vinegar over the beef, coating them evenly, then let it marinate for 1 hour at room temperature.
  5. Hang the marinated beef strips in a cool, dry place for 2 to 3 days until firm and dry to the touch.
  6. Once dried, slice the biltong thinly against the grain before serving.
