Ingredients
- 400 g rice
- 600 g fish
- 300 g tomatoes
- 2 onions
- 200 g carrots
- 200 g cabbage
- 4 tbsp oil
- 4 garlic
- 1 tsp salt
- 1 tsp black pepper
How to make Thieboudienne
- Rinse 400 g of rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot over medium heat, pour in 50 ml of oil and sauté 150 g of chopped onion for about 5 minutes until soft.
- Add 2 cloves of minced garlic, 300 g of diced tomatoes, 200 g of diced carrots, and 200 g of chopped cabbage to the pot.
- Cook the mixture for 10 minutes, stirring occasionally, until the vegetables soften and release their flavors.
- Carefully stir in 600 g of fish that is seasoned with 1 tsp of salt and ½ tsp of black pepper; simmer for 15 minutes to cook through.
- Add the soaked rice to the pot along with enough water to cover everything by 2 cm.
- Bring to a gentle boil, then reduce the heat to low and cover, cooking for 20-25 minutes until rice is tender and water absorbed.
- Once done, remove from heat and let it sit covered for 5 minutes to steam slightly before serving.
- Fluff the rice gently with a fork before serving it on large plates.
- Serve hot, placing the fish and vegetables beautifully on top of the rice.
