How to make Mechouia

  1. Preheat the oven to 200°C (400°F) for roasting the vegetables.
  2. Place 300 g of bell peppers and 300 g of tomatoes on a baking sheet.
  3. Roast the vegetables for 25-30 minutes until the skin is charred and blistered.
  4. Once the vegetables are cool enough to handle, peel the charred bell peppers and tomatoes.
  5. Chop the peeled vegetables, along with 100 g of onion and 2 cloves of garlic, into small pieces.
  6. In a mixing bowl, combine the chopped vegetables with 60 ml of olive oil and season with 1 tsp of cumin, 1 tsp of salt, and ½ tsp of black pepper.
  7. Stir well until all ingredients are uniformly mixed together.
  8. Drizzle 40 ml of lemon juice over the mixture and toss well to combine everything evenly.
  9. Transfer the salad to a serving dish and spread it out for presentation.
  10. Serve chilled or at room temperature to enhance the flavor of the mechouia.
