- 400 g saltfish
- 300 g ackee
- 1 onion
- 1 bell pepper
- 2 tomatoes
- 2 garlic
- 1 tsp thyme
- 1 tsp ¼ tsp black pepper
- 2 tbsp vegetable oil

- Soak 400 g of saltfish overnight, then boil it in fresh water for about 20 minutes until tender.
- Flake the soaked saltfish and set it aside for later use.
- In a frying pan, heat 2 tbsp of vegetable oil over medium heat, then sauté 100 g of chopped onion, 50 g of chopped bell pepper, and 2 cloves of minced garlic until softened, about 3-4 minutes.
- Add 100 g of diced tomatoes and 1 tsp of thyme to the pan, then stir in the flaked saltfish and cook for 3-4 minutes.
- Gently fold in 300 g of drained ackee, cooking just until heated through, about 2 minutes.
- Season with ¼ tsp of black pepper, then serve hot.
