- 300 g long-grain rice
- 400 ml coconut milk
- 200 g pineapple
- 200 g mango
- 1 red bell pepper
- 100 g green peas
- 1 tsp ½ tsp salt
- 1 tsp ¼ tsp black pepper

- In a pot, combine the rinsed rice, 400 ml of coconut milk, and 400 ml of water.
- Bring the mixture to a boil over high heat, then reduce to low heat and simmer for 15 minutes.
- Stir in 200 g of chopped pineapple, 200 g of mango, 50 g of diced red bell pepper, and 100 g of green peas.
- Season with ½ tsp salt and ¼ tsp black pepper, then cook for an additional 5 minutes.
- Fluff the rice with a fork and serve warm.
