  1. Boil and roughly crush the potatoes. Temper mustard seeds and curry leaves in oil, add onion, ginger, chilli and turmeric, then the potato. Cook to a soft filling.
  2. Get a wide flat pan hot. Pour a ladle of batter and spread it thin in a spiral. Drizzle oil around the edge.
  3. Cook without turning until the underside is crisp and lifts freely.
  4. Lay potato down the middle, fold the crepe over and slide it out. Serve with coconut chutney.
