Pepian recipe
A rich and flavorful Guatemalan stew that warms the soul.
Ingredients
- 800 g chicken thighs
- 400 g tomatoes
- 200 g bell peppers
- 150 g onion
- 4 garlic
- 100 g pumpkin seeds
- 2 tbsp coriander
- 1 tbsp cumin
- 500 ml chicken broth
- 1 tsp salt
- 1 tsp black pepper
- 2 tbsp oil
How to make Pepian
- Chop 1 onion, 2 bell peppers, and 3 garlic cloves before starting. Measure 800 g of chicken thighs, 400 g of tomatoes, and 100 g of pumpkin seeds.
- In a pot, heat 2 tablespoons of oil over medium-high heat until hot.
- Add 800 g of chicken thighs to the pot and brown them on all sides, about 5-7 minutes.
- Add the chopped onion, minced garlic, and chopped bell peppers to the pot; sauté for 8 minutes until softened.
- In a blender, combine 400 g of tomatoes, 100 g of pumpkin seeds, 1 tablespoon of coriander, and 1 teaspoon of cumin; blend until smooth.
- Pour the blended mixture into the pot with the chicken and vegetables. Stir well to combine.
- Add 500 ml of chicken broth, 1 teaspoon of salt, and ½ teaspoon of black pepper; mix thoroughly.
- Bring the stew to a simmer, cover partially, and cook for 60 minutes until the chicken is very tender.
- Taste and adjust seasoning. Serve hot, accompanied by rice or tortillas.
