Ingredients
- 400 g basmati rice
- 800 g chicken
- 2 onions
- 2 tomatoes
- 4 garlic
- 4 tbsp vegetable oil
- 800 ml water
- 1 cinnamon stick
- 5 cardamom pods
- 1 bay leaf
- 1 tsp salt
- 1 tsp black pepper
How to make Machboos
- In a large pot, heat 3 tablespoons of vegetable oil over medium heat until shimmering.
- Add 1 finely chopped onion and sauté until it turns golden brown, about 5 minutes.
- Stir in 3 minced garlic cloves and continue to cook for 1-2 minutes until fragrant.
- Add 1 kg of chicken pieces and cook until browned on all sides for about 10 minutes.
- Fold in 1 chopped tomato and combine well, allowing it to soften for a minute or so.
- Introduce 1 cinnamon stick, 5 cardamom pods, 1 bay leaf, and season with 1 teaspoon of salt and 1 teaspoon of black pepper.
- Pour in 800 ml of water, bring the mixture to a boil, then reduce heat to simmer for 30 minutes until the chicken is cooked through.
- Stir in 400 g of rinsed basmati rice, cover the pot, and cook for 20-25 minutes until the rice is tender and fluffy.
- Fluff the rice with a fork and serve it hot, garnished with fried onions as desired.
